Abstract

Food safety is a concept gaining increased importance, as more and more food scandals shake the world. The concept is central to all of us involved in primary production and food processing, and it goes without saying that food should be safe. The concept of quality also includes aspects that are not visible on products, such as environmental impact and traceability. These qualities can be secured by various types of certification. Several surplus values are achieved when the production is certified. Certification is done according to a standard, a document with fixed requirements, usually based on HACCP, the normative product security standard in EU, when concerning food. Independent inspection companies perform audits according to the standards. This report is a result of the project "Quality and food safety to meet the market requirements / training modules", which has been performed within Tillväxt Trädgård.
