Förstudie för etablering av en must- och vinindustri på Bjärehalvön: förutsättningar för odling och produktion

Abstract

The aim of the study was to investigate the conditions for the expansion of fruit, berry and wine production as well as the possibilities for establishing a juice and wine industry based on local produce from Bjäre peninsula. Interviews, discussions and visits to growers and other actors within the growing and processing of beverages, combined with literature studies and contacts with suppliers of grape juice and wine industry, forms the basis of the results presented. Apple cultivation in Sweden has begun to increase after a period of decline. The reason for this is increased demand and thus rising prices. With a plant of juice and wine production the opportunities increase for growers on Bjäre peninsula to sell their apples to juice producers or themselves make juice on the plant. The grower can sell the product on the farm or to stores, restaurants and hotels in the area. With the current prices, it is interesting to grow apples for both fresh consumption and as raw material for juice. The growers can get more net income for the products by processing them into juice or wine themselves. To conclude there are good prospects for both juice and wine on Bjäre peninsula. Calculations for viticulture and vinification shows that production costs for wine are high. For a sale to Systembolaget (the government retail store for liquor), it will be difficult to get such prices that wine itself becomes profitable. Viticulture and vinification open, however, opportunities to offer visitors, as tourists and visitors to the restaurants, locally produced wines. Visits to wineries including wine tasting and eventually creation of a ”Bjäre wine route” including wineries in the area would increase the area's attractiveness. Offering different experiences in connection with the sale and consumption of products, especially if farm sales of wine are allowed in Sweden can create added value and thus increased profitability. As part of this project, Nerhammar Consulting has been engaged for the design of juice and wine production lines. The proposed facilities can create the basis for possible establishment of facilities at Bjäre or elsewhere.
